Two Regions

A story of heritage, memory and preserving culture through baking

Food has always carried more than flavour. It carries memory, sacrifice, migration and identity. Across generations, recipes become a language of their own, preserving stories that words sometimes cannot.

For Lawrence Biondo, baking is a way of honouring where he comes from and continuing the legacy of the people who shaped him. Through Two Regions, he shares not only traditional flavours, but the history, culture and family behind them.

 

Two Regions

My name is Lawrence Blaise Biondo. I was born and raised in Melbourne, Victoria, with Adelaide, South Australia always feeling like my second home. I am proudly Australian, but deeply and unmistakably Italian at heart.

My name itself carries my history,  Lawrence and Blaise are the literal translations of my two Nonni, Lorenzo and Biagio. Alongside them stood my Nonne, Rosa and Fernanda, women of quiet strength who worked beside their husbands at every step. Together, they made enormous sacrifices when they left Italy for Australia, carrying little more than faith, resilience, and the flavours of home. Their hard work built the foundation that my family stands on today.

Two Regions was born from their journey. It represents the two parts of Italy that shaped my bloodline; Sicily and Campania, and the love, grit, and devotion that travelled with them across the world. Through baking, I honour the recipes, heritage and sense of togetherness they preserved so fiercely.

Culture, to me, is identity. It is knowing where you come from so you can understand where you are going. It is language spoken in dialect, hands moving instinctively through recipes never written down, and the deep responsibility to continue what was started long before me. Two Regions is my way of carrying that legacy forward, not just as a business, but as a living tribute to the four people whose courage made my life possible.

My most popular biscotti is the pistachio amaretti as it holds a deep connection to my Sicilian roots. Sicily’s history is layered with influence, particularly from Arab rule, when nuts and sugar were introduced and transformed local baking traditions. From this came Paste di Mandorla, almond paste or soft almond biscuits as they are called. They are a staple of Sicilian pastry and heritage. My pistachio amaretti is a nod to that legacy. It honours the simplicity of humble ingredients, and the tradition of creating something extraordinary from what the land provides.

I started baking because I felt a responsibility and a calling to preserve what I had watched growing up. The movements, the smells, the unspoken methods passed down through generations. Baking became my way of keeping those memories alive and sharing them with others. What began as a personal tribute has grown into something much bigger.

 

A way to connect people to culture, history, and the feeling of home.
